This week’s meal plan is based on products available at Aldi, but you can shop wherever is most convenient for you. Most recipes serve two and can also be prepared in advance for lunch.
Monday
Lasagne (Serves 2–4)
Quick Option (Busy Days)
For a convenient option, use a pre-made family lasagne (£4.65). Prepare according to the cooking instructions on the packaging.
Homemade Option
To prepare a homemade lasagne, you will need creamy lasagne sauce and creamy tomato sauce (£0.79), lasagne sheets (£0.49), and minced meat of your choice (£3–£5).
Cook the minced meat in a frying pan until browned, seasoning as desired. Boil the lasagne sheets in water for a few minutes to soften slightly.
Assemble the lasagne in an ovenproof dish by layering the lasagne sheets, cooked mince, and sauces, repeating until the dish is filled. Finish with a layer of grated cheese on top.
Bake in the oven for 40–50 minutes until cooked through and golden on top. Allow the lasagne to cool slightly before serving.
Serve With

Tuesday
Burgers and Homemade Chips (Serves 2–4)
Cook the Ashfields Smash Burgers (£3.49) according to your preferred method, either in an air fryer or by pan-frying until fully cooked.
Cut the miniature potatoes (£0.59 per bag) in half, using as many as desired. Lightly spray with Frylight or coat with your preferred oil. Season with salt, pepper, and any additional seasonings to taste.
Cook the potatoes in an air fryer or oven for approximately 20 minutes, or until golden and crisp.
Serve the burgers with the homemade chips.
Cheeseburger Salad (Serves 1–2)
This is a simple meal prep option using leftover burgers.
Prepare a salad base using lettuce, cucumber, and tomato. Add grated or sliced cheese if desired. Top the salad with a cooked burger and finish with mayonnaise and ketchup to create a cheeseburger-style salad.
Wednesday
Salmon, Potatoes and Parsley Sauce (Serves 2)
Season the boneless salmon fillets (£3.59) with salt and pepper, drizzle with your preferred oil, and add a squeeze of lemon if desired (approx. £0.45). Cook the salmon either in an air fryer or by pan-frying until fully cooked.
Peel and chop the potatoes (£2.25 per kg), then boil in salted water until tender.
Prepare Everyday Essentials Golden Rice (£0.28) in the microwave according to the packet instructions.
For the parsley sauce, use a parsley sauce mix (£0.39) and prepare by heating with milk as directed.
Serve the salmon with the boiled potatoes, rice, parsley sauce, and a side of mixed vegetables (£0.99).
Salmon Pasta (Serves 1)
Cook the pasta according to the packet instructions until tender, then drain. Penne (69p)
Flake the cooked salmon and add it to the pasta along with a small amount of cream cheese or crème fraîche, whatever you have in the house. Stir in minced garlic and a handful of spinach (optional).
Finish with a squeeze of lemon juice and season with black pepper to taste before serving if desired.
